03 Oct 2017 Liquid Riot’s homemade pretzels
Fresh cans of Liquid Riot beers go perfectly with fresh baked pretzels. We spotted the kitchen crew creating a batch this morning and realized we should share a home-version of our recipe. Enjoy!
Soft Pretzel Recipe
1 1/4 cup warm water
1 tablespoon sugar
1 package instant dry yeast
2 tablespoon vegetable oil
1 1/2 teaspoon kosher salt
2 1/2 to 3 cups all purpose flour
Rock pretzel salt
3 ounces food-grade lye or ¼ cup baking soda (wear protective gloves if using lye)
1/2 gallon cold water
Mix warm water, sugar, yeast and oil and let bloom for 10 minutes. Add salt and flour and mix until well combined. Roll the dough out on cutting board and slice into 5 oz potions. Shape pretzels (see video example below) and dip in lye or baking soda mixture and then place on a parchment lined cookie sheet. Top with pretzel salt and bake at 350 for 8-10 minutes until golden.
